This has 11g net carbs per serving and is so delicious! For filling: 3 apples, sliced 12oz frozen berries (whichever berries you prefer) 1/2 cup sweetener 1 tsp. cinnamon 1/4 tsp. salt 1/2 tsp. Xanthan gum For topping: 1/4 cup coconut flour 1/2 cup unsweetened shredded coconut 1 tbsp. sweetener 4 tbsp. butter 1/4 cup chopped walnuts Preheat the oven to 350F Grease an 8x8" baking dish Mix 1/2 cup sweetener, cinnamon, salt and Xanthan gum in a small bowl Put the apples and berries in to a large bowl and add the cinnamon. Mix it all together well. For the topping, mix the coconut flour, shredded coconut and sweetener in a medium sized bowl. Cut in butter with a pastry cutter. Add the walnuts and mix well. Place fruit mixture in a baking dish and pour 1/2 cup water over the top. Crumble the coconut flour mixture over the top of the fruit. Bake at 350F for 30-40 minutes until top is golden brown and the fruit is bubbling. Enjoy and please post pics if you make this!
